Russian Cottage Cheese Pancakes

Sweet fried cheese fritters or pancakes. Garnished with sour cream, jam, honey, or applesauce. All-time favorite Russian breakfast!

Learn how to make easy and healthy syrniki at home. Super easy and tasty recipe. Syrniki is cottage cheese pancakes cooked across all Eastern Europe. 

Farm-cheese pancakes known as Syrniki are loved by kids and grown-ups alike. Mmm... it's my grandmother's recipe and she makes the best Syrniki in the world! You can also make this dish with your kids, its so much fun! 


  • 1 cup or 300 gr of Dry cottage cheese/quark cheese or farmers cheese ( you must have dry consistency, can buy in russian or eastern european shops)

  • 1/2 cup or 80 gr of flour
3 tbs of sugar
2 eggs

  • Pinch of salt

  • Vanilla extract ( optional)

  • 1 tsp of Baking soda + 1tsp of white vinegar

  • Sour cream, strawberries, jam


Step 1: Combine together cottage cheese, egg, and white sugar. Mix well and add flour. Place vinegar and then soda on top and wait till that bubbles up, add to the mixture. 

Step 2: Mix well to form a soft mixture.

Step 3: Transfer the mixture to a floured surface and roll it into dough balls.

Step 4: Pat each piece into additional flour to form a patty.

Step 5: Fry the syrniki till it turns golden brown on both sides for about 3 to 5 minutes on each side.

Step 6: Serve and enjoy with sour cream, jam, fruits!
