How to make Meatballs at home. This is traditional Russian dish for meat lovers. This recipe serves 4 people and makes about 12 Kotlets. Have you ever tried Russian Cutlets? It could be your next quick delicious dinner. Russian cutlets are very easy to make and are absolutely delicious! You can make as many as you like and just keep the rest in your fridge for tomorrow. The leftovers are as yummy as fresh ones. Russian cutlets or kotleti might remind you of burger patties or meat balls, they are, after all are made out of ground beef. However, their shape is different than meat balls or patties, and because Russians love rich flavor in their food, kotleti might contain more then just ground meat and spices. This is my childhood grandmas recipes but there are so many different variations of Russian kotleti nowadays.
500 gr of minced beef ( you can also use 250 gr of beef and 250 gr of pork)
1 large onion
3-4 cloves of garlic
Salt & Pepper
1 cup of milk
1 tsp of mustard ( optional)
2 medium potatoes ( washed and peeled)
Step 1 : In a food processor add peeled and chopped potatos, onion, garlic, salt and pepper, and blitz until smooth. Then add mustard and mix everything. If you dont have a food processor, you can do everything by hand on the hand grated ( smallest cut) This however will take much longer.
Step 2 : Add minced beef, egg and mix for few minutes until its incorporated. Place meat into a large bowl and add milk. You can add less or more, just make sure your meat is soft - not runny and not too hard either.
Step 3 : Take a large tbsp of meat mixture, roll in your hands ( make sure they are wet, it will be easier to handle the meat) and then dip into breadcrumbs from both sides and set aside. Repeat until they are finished.
Step 4 : Prepare the pan, add hot oil and butter and wait till it gets really hot, only then place beef meatballs inside. Fry from both sides for 5-8 min. At first have high heat, so they crisp up and then lower it to low - medium. Once they are all done, serve with whatever garnish you want. Enjoy!
