This stunning and elegant cake combines two of my favourite flavours passion fruit and mango. It consists of tropical mousse mix, which is so loved by many. This passion fruit and mango mousse is so spectacular and is of the best desserts I have ever made. I also love the beautiful velvet spray effect in red and yellow. Why not make someone feel special with I love you cake?
100 mango puree (about 1 large sized mangoe)
60 gr passion fruit puree
140 ml double/heavy cream
5 gelatine leafs
Step 1 : Soak gelatine leafs in cold water and set aside for 10 min.
Step 2 : In a pot add mango and passion fruit puree, sugar and mix everything together. Place on a stove and cook for 10 min or so, until sugar dissolves.
Step 3 : Add soaked gelatine leafs into the hot mixture, so it melts.
Step 4 : Whisk heavy/double cream until soft peaks, do not over whisk the cream, as it needs to be quite liquid.
Step 5 : Add cream to your puree slowly, a little bit at a time and keep mixing until you have creamy mousse. Make sure your puree is cold before adding the cream.
Step 6 : Place mousse into prepared silicon moulds (heart shape) or any other shape and place in a freezer to set completely. This can take several hours.
Step 7 : Decorate the hearts how you like it, I used velvet spray of various colours. Place in a fridge for 30 min to defrost and then enjoy
