Edible Cookie Dough
Edible cookie dough has been a steady favorite for a while, and for good reason — all the flavor of raw cookie dough, none of the raw egg or flour safety concerns. Genuinely satisfying eaten straight from the bowl.

Ingredients
- 120g plain flour (heat-treated, see note below)
- 115g unsalted butter, softened
- 100g brown sugar
- 50g granulated sugar
- 2 tbsp milk
- 1 tsp vanilla extract
- Pinch of salt
- 100g mini chocolate chips
Directions
- Heat-treat the flour first: spread on a baking sheet and bake at 90°C/195°F for 5 minutes, or microwave in 30-second bursts, stirring between, until it reaches 74°C/165°F. Let cool completely — this kills any bacteria and makes it safe to eat raw.
- Cream the butter and both sugars together until light and fluffy.
- Add milk, vanilla, and salt, mixing until combined.
- Fold in the cooled heat-treated flour until a soft dough forms.
- Fold in the chocolate chips.
- Scoop into small bite-sized balls, or just keep it in a bowl to eat with a spoon.
- Store in an airtight container in the fridge for up to a week.
Why heat-treat the flour? Raw flour can carry bacteria the same way raw eggs can — this simple step makes cookie dough genuinely safe to eat without baking it.
