Latvian Layered Rye Bread Dessert
This Latvian layered rye bread dessert is amazing and unique — your guests will genuinely be surprised. Rupjmaizes kārtojums is a traditional Latvian dessert based on the country's famous dark rye bread, similar in construction to a British trifle, and is often called Sweet Rye Trifle. It's considered a real treasure of Latvian national cuisine.

Ingredients
- 10 slices coarse rye bread (about 350g total), slightly dried, crust removed
- 200g mascarpone cheese
- 150g double/heavy whipped cream
- 60g icing sugar
- 1 tbsp ground cinnamon
- 50g sugar
- 6 tbsp cranberry jam
Directions
- In a bowl, combine mascarpone cheese, whipped cream, and icing sugar. Mix well and transfer to a piping bag.
- Cut the rye bread into pieces, remove the crust, and pulse in a food processor with sugar and cinnamon until finely crumbed.
- Toast the crumb mixture in a dry, hot pan for 5-10 minutes, stirring constantly, to dry it out as much as possible. Blitz again in the food processor until fine.
- To assemble, layer toasted rye crumbs, then the mascarpone cream, then cranberry jam in individual serving glasses. Repeat the layers, finishing with a decorative top layer.
- Decorate with fresh mint. Serve immediately or refrigerate — it keeps 3-4 days.
