Sweet Cloud Bread
Cloud bread has been floating around (pun intended) for a while now, but the dessert version — sweetened, vanilla-scented, and impossibly light — deserves its own moment. It's less "bread" and more an airy, meringue-like cloud, perfect as a base for berries and whipped cream.

Ingredients
- 3 large eggs, separated
- 3 tbsp granulated sugar
- 1/4 tsp cream of tartar
- 1 tsp vanilla extract
- Pinch of salt
- Optional toppings: fresh berries, whipped cream, honey drizzle
Directions
- Preheat oven to 150°C/300°F and line a baking sheet with parchment paper.
- Whisk egg whites with cream of tartar and salt until foamy, then gradually add sugar, whisking until stiff, glossy peaks form.
- In a separate small bowl, whisk egg yolks with vanilla until pale and slightly thickened.
- Gently fold the yolk mixture into the whipped whites in three additions, being careful not to deflate the mixture.
- Spoon into 4-6 individual cloud shapes on the lined tray, or spread into one large cloud.
- Bake for 25-30 minutes, until lightly golden and set but still soft in the center.
- Let cool completely on the tray before serving — they'll deflate slightly, which is normal.
- Top with fresh berries, a dollop of whipped cream, and a drizzle of honey.
