Baked Oats

Baked oats have taken over the healthy-baking corner of social media, and honestly, it deserves the hype — it bakes up like a cross between a muffin and a cake, but it's actually a genuinely nourishing breakfast. Blend, pour, bake, done.

Ingredients

  • 80g rolled oats
  • 1 ripe banana
  • 1 egg
  • 150ml milk (dairy or plant-based)
  • 1 tbsp honey or maple syrup
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • Toppings: chocolate chips, berries, nut butter, sliced banana

Directions

  1. Preheat oven to 180°C/350°F and grease a small oven-safe dish or ramekin.
  2. Add oats, banana, egg, milk, honey, baking powder, vanilla, and salt to a blender. Blend until smooth.
  3. Pour the batter into the prepared dish.
  4. Add your toppings of choice on top — chocolate chips, berries, or a swirl of nut butter all work well.
  5. Bake 20-25 minutes, until risen and set in the middle, with a light golden top.
  6. Let cool slightly before eating — it's soft and custardy warm, firmer once cooled.

Tip: this recipe scales easily — double it for a larger baking dish and multiple servings, or make individual ramekins for meal prep.
