Today's the day — my Cheesecake on a Stick waitlist is officially open! To celebrate, here's one more cheesecake-inspired treat that's been everywhere lately: cheesecake stuffed cookies, with a soft cookie shell hiding a creamy cheesecake center.

Cheesecake Filling
Cookie Dough
Make the filling first: beat cream cheese, sugar, and vanilla until smooth. Scoop into small teaspoon-sized balls onto a lined tray and freeze for at least 1 hour, ideally overnight.
For the cookie dough: cream butter and both sugars until light and fluffy. Add egg and vanilla, mix well.
In a separate bowl, whisk flour, baking soda, and salt, then fold into the wet ingredients along with the white chocolate chips.
Scoop a portion of cookie dough, flatten slightly, place a frozen cheesecake ball in the center, then wrap the dough completely around it, sealing well so none of the filling is exposed.
Chill the assembled cookies for at least 30 minutes (this prevents spreading and helps the filling stay contained).
Preheat oven to 180°C/350°F. Bake for 12-14 minutes, until the edges are golden but the centers still look slightly underdone.
Let cool on the tray for 10 minutes before moving — they're fragile straight out of the oven.
