Double Chocolate Fudge Cake
This chocolate fudge cake will blow your mind. I don't usually get obsessed with chocolate cakes, but this one had me obsessed. It has unbelievable chocolate chewy brownie cake layers, rich chocolate ganache in the middle and around. It's a dream cake for all the chocoholics out there — a must-make for any occasion.

Ingredients
- 225g plain chocolate
- 175g butter
- 225g caster sugar
- 60g plain flour
- 3 eggs, separated
- 1 tsp vanilla
- 1 tsp salt
Chocolate Ganache
- 200g dark chocolate
- 150g double cream
- Maldon sea salt
Directions
- Preheat oven to 180°C/350°F. Melt chocolate with butter in a microwave or over a double boiler, then add sugar, flour, vanilla, salt, and egg yolks.
- Beat egg whites until fluffy and stir in carefully. Cook both cakes for approximately 35-40 minutes. Leave to cool down completely. (You'll need 2 x 16cm/6-inch cake tins.)
- For the chocolate ganache, melt chocolate and combine with cream. Wait 30-60 minutes for the ganache to set.
- Assemble the cakes — add the first layer, a generous amount of ganache, then the second cake, covering it all over. Add a little salt in between the layers.
- Place the cake in the fridge to set, then enjoy — you won't be able to stop at one slice!
