Easy Peppermint Bark

Peppermint bark is the easiest homemade Christmas gift there is: a layer of dark chocolate, a layer of creamy white chocolate, and a crunchy shower of crushed candy canes on top. It takes 15 minutes of actual work, needs no oven, and looks beautiful packed into little cellophane bags with a ribbon. It's also the treat everyone sneaks from the cookie tin first.

Why you'll love this peppermint bark

  • No bake, and just 4 ingredients.
  • Two distinct layers that don't slide apart (I'll show you the trick).
  • Perfect homemade gift for teachers, neighbours and friends.
  • Keeps for 2 weeks, so you can make it early.

Ingredients (one 9x13-inch / 23x33 cm tray)

  • 10 oz (285 g) good-quality dark or semi-sweet chocolate, chopped
  • 12 oz (340 g) good-quality white chocolate, chopped
  • 1/2 tsp peppermint extract (divided)
  • 6 candy canes (about 3/4 cup / 90 g), crushed

Instructions

  1. Line a 9x13-inch tray with baking paper.
  2. Melt the dark chocolate in short 20-second bursts in the microwave (or over a pan of barely simmering water), stirring well between each, until smooth. Stir in 1/4 tsp peppermint extract.
  3. Spread it evenly over the baking paper and chill for 10–15 minutes, until just set but still slightly tacky. It shouldn't be rock hard.
  4. Melt the white chocolate gently the same way and stir in the remaining 1/4 tsp peppermint extract.
  5. Spread the white chocolate over the dark layer.
  6. Top immediately with the crushed candy canes, pressing them in lightly.
  7. Chill for 30 minutes until firm, then break or cut into pieces.

Alla's tips

  • Use good chocolate bars, not chips. Chips contain stabilisers that stop them melting smoothly.
  • Melt gently. White chocolate scorches easily. Use short bursts and stir well.
  • Add the second layer while the first is still slightly tacky. This is the secret to layers that don't separate.
  • Crush the candy canes in a zip-top bag with a rolling pin. Sift out the dust so the top stays crunchy, not sticky.
  • Never let water touch the chocolate. Even a drop makes it seize.
  • Cut with a hot knife for neat squares, or snap it by hand for rustic shards.

Variations

  • Triple layer: dark, then white, then a swirl of dark on top.
  • Oreo peppermint: add crushed Oreos to the white chocolate layer.
  • Christmas colours: swirl a little red-tinted white chocolate into the top layer.

Storage

Keep in an airtight container in a cool place for up to 2 weeks, or in the fridge in warm climates. Separate layers with baking paper.

FAQ

Why did my layers separate? The first layer was too cold and hard when you added the second. Add the white chocolate while the dark is just set.

Can I use chocolate chips? They can work, but good-quality bars melt smoother and taste better.

Why did my white chocolate go thick and grainy? It overheated or touched water. Melt it slowly in short bursts.

Can I make it without peppermint extract? Yes. The candy canes add plenty of mint flavour on their own.

How far ahead can I make it for gifts? Up to 2 weeks ahead. Store it in a cool, dry place.

How do I package it as a gift? Use cellophane bags or small tins lined with baking paper, tied with ribbon and a handwritten tag.
