Simple, pretty, and genuinely easy — these no-bake cheesecake stuffed strawberries are the perfect bite-sized treat for a summer gathering. No oven, no fuss, just a creamy cheesecake filling piped into fresh strawberries.

Wash and dry the strawberries thoroughly. Cut a small slice off the bottom so they stand upright, then use a small knife or melon baller to hollow out the center slightly.
Beat cream cheese, icing sugar, and vanilla together until smooth and fluffy.
In a separate bowl, whip the heavy cream to soft peaks, then fold into the cream cheese mixture.
Transfer the filling to a piping bag and pipe generously into each strawberry.
Dip the tops in crushed graham crackers for that classic cheesecake crust flavor.
Drizzle with melted chocolate if using, and refrigerate for at least 30 minutes before serving.
