Watermelon Cupcakes
Watermelon is one of those fruits you eat and can only think happy thoughts about — sunshine, happy faces, friends. These "cupcakes" are actually watermelon slices topped with whipped cream and berries, genuinely pretty and genuinely delicious, and a fun no-bake summer treat.

Ingredients
- 1 medium seedless watermelon
- Berries, for decoration (strawberries, raspberries, blueberries)
- 150ml double/heavy cream (yogurt or coconut cream also work)
- 1 tsp vanilla extract
- 2-3 tbsp icing sugar
Directions
- Cut watermelon into cake-shaped slices. Pat dry thoroughly with paper towels to remove moisture. Use a cookie cutter to cut out your desired shapes.
- Whip the cream until light and fluffy, adding vanilla extract and icing sugar.
- Pipe the cream onto each watermelon "cupcake."
- Decorate with fresh berries on top and serve immediately.
Tip: don't skip patting the watermelon dry — it helps the whipped cream actually stick instead of sliding off.
